High 5 Michigan Cherry Chicken Salad

  • 4 chicken breast halves, roasted, grilled or poached; cooled completely, diced

  • ¼ cup red onion, diced very small

  • ½ cup celery, diced very small

  • ½ cup dried Michigan cherries (or more to taste)

  • 1 cup mayonnaise

  • ½ cup sour cream

  • High 5 Salt Blend of your choice to taste

  • High 5 Fixer Upper to taste

  • additional sour cream/mayonnaise to taste

  • 8 miniature grilled crusty rolls or baguettes for serving OR washed and chilled lettuce leaves


  • mix all ingredients except salt and combine well; add any additional mayonnaise or sour cream to create consistency you like
  • season with High 5 Salt Blend, High 5 Fixer Upper, or salt and pepper; refrigerate until service
  • slice rolls or baguettes in half (like clam shells); brush insides with pure olive oil and toast or broil for 2-3 minutes, just until crisp; COOL
  • alternatively, wash and chill 8 lettuce leaves
  • fill with chicken salad and serve
