4 chicken breast halves, roasted, grilled or poached; cooled completely, diced
¼ cup red onion, diced very small
½ cup celery, diced very small
½ cup dried Michigan cherries (or more to taste)
1 cup mayonnaise
½ cup sour cream
High 5 Salt Blend of your choice to taste
High 5 Fixer Upper to taste
additional sour cream/mayonnaise to taste
8 miniature grilled crusty rolls or baguettes for serving OR washed and chilled lettuce leaves
Directions
- mix all ingredients except salt and combine well; add any additional mayonnaise or sour cream to create consistency you like
- season with High 5 Salt Blend, High 5 Fixer Upper, or salt and pepper; refrigerate until service
- slice rolls or baguettes in half (like clam shells); brush insides with pure olive oil and toast or broil for 2-3 minutes, just until crisp; COOL
- alternatively, wash and chill 8 lettuce leaves
- fill with chicken salad and serve
